Recently, a popular YouTube channel, ElBit Analyst made a very nice and complete video comparing GTA Trilogy - original version and the new version released and announced recently by Rockstar Games.

Several changes were applied, such as filters, shaders, shadows, 4K resolution, FPS, translation to Brazilian Portuguese and other aspects. However, many say they didn't like the way users were remastered on these remastered games from Rockstar Games.
